What To Do With The Left Over Pumpkin…

It’s that time of year again when we all enjoy creating spooky pumpkins with our little ones, but it’s always difficult to know what to do with the left over pumpkin, so here are a few ideas:

Pumpkin Bread Rolls with Cinnamon Butter from the Handle the heat website

These not only look delicious but seem relatively easy to make too. You will need the following ingredients:

For the bread:
1 packet (2 1/4 teaspoons) instant yeast
227ml of full fat milk, scalded and cooled to lukewarm
50g granulated sugar
3 tablespoons unsalted butter, melted
113g pumpkin puree
2 large eggs, divided
1 teaspoon salt
480g all-purpose flour
Sliced pecan pieces, for the 'stems'

For the butter:
1 stick (4 ounces) unsalted butter, at room temperature
57g powdered sugar
57g cup honey
1 teaspoon ground cinnamon

Pumpkin Salsa from the Little Figgy website

Create a spicy twist on the usual tomato salsa by creating this delicious looking tomato and pumpkin salsa.

You will need:

1 tbsp Olive Oil
2 medium tomatoes, chopped
1 small onion, chopped
2 Garlic cloves, minced
Can of whole peeled Tomatoes, drained and chopped
100g Pumpkin Puree
½ tsp Salt
1 tsp Sugar
3 tbsp chopped (from the jar) Jalapenos
1 tsp Cinnamon
½ tsp Pumpkin Pie Spice
½ - 1 tsp Crushed Red Pepper Chili flakes, or to taste

Chicken, bacon and pumpkin Gnocchi from the Nutmeg Granny website

You will need:

2 packages gnocchi
8 strips bacon, diced
2 boneless skinless chicken breasts, diced
1 packet of cream cheese, cut into cubes
250g pumpkin puree
50g Parmesan cheese
2 teaspoons smoked paprika
1/2 teaspoon chipotle chili powder
1/2 teaspoon garlic powder
500ml of full fat milk
Salt and pepper, to taste
3 green onions, sliced
