What To Do With Left Over Asparagus Stems?

It always seems a shame to through away the majority of a bunch of asparagus, especially when it’s quite expensive, so here is a delicious soup recipe that uses up the stems:

500ml of chicken or vegetable stock
1 tbsp butter
1 tbsp olive oil
1 small onion chopped
Bunch of asparagus stems, not the tips
150g of cream fresh
Salt and Pepper to taste

First cut off of the very end of the asparagus stalks, as these will be too hard to eat, then cut your asparagus into small chunks. Heat up a frying pan with a the oil and butter (by adding oil to the butter it will stop it from burning) then fry the onion gently for about 5 minutes until it goes transparent. Then add the stems and the stock to the frying pan and cook for around 15 minutes. When cooked add the cream fresh, season and serve.
