What Can I Do With Left Over Pumpkin?

It seems like only a few years ago that most of us just used to throw away unused pumpkin, as we didn't know what to do with the remains at Halloween, however now there are so many recipes to choose from on-line that it's hard to decide which one to make.

We checked out the BBC website in search of some unusual recipes, and on their site there are a whopping 23 pumpkin recipes, from spicy pumpkin and apple chutney to Halloween pumpkin cake. So we've chosen a couple of our favourite BBC recipes to share with you; Classic pumpkin pie with pecan and maple cream and Pumpkin curry and Chickpeas.

For the BBC's Classic pumpkin pie with pecan and maple cream you will need:

550g piece pumpkin, peeled and cut into chunks
500g pack shortcrust pastry
175g light muscovado sugar
2 eggs
142ml pot double cream
1 tsp cinnamon
1 tsp allspice
1 tsp ground ginger
Small grating of nutmeg
For the pecan and maple cream
142ml tub double cream
5 tbsp maple syrup
25g pecans, finely chopped

For the BBC's Pumpkin curry and Chickpeas you will need:

1 tbsp sunflower oil
3 tbsp Thai yellow curry paste
2 onions, finely chopped
3 large stalks lemongrass, bashed with the back of a knife
6 cardamom pods
1 tbsp mustard seed
1 piece pumpkin or a small squash (about 1kg)
250ml vegetable stock
400ml can reduced-fat coconut milk
400g can chickpeas, drained and rinsed
2 limes
Large handful mint leaves
Naan bread, to serve
