Three Tasty Meals With Pumpkin...

It's at this time of year when we all want to turn to warming foods, and what better a vegetable to enjoy at this time of year than pumpkin, it's in season and delicious. So here are three ways in which you can enjoy pumpkin this autumn...

Pumpkin Lasagne

2 onions finely sliced
2 cloves garlic
400g pumpkin pureed
375ml of double cream
175 semi skimmed milk
1 tsp of fennel
1 tsp of dry sage
1 tsp of black pepper
250g grated parmesan
Lasagne sheets

Preheat your oven to 190c. Put the onions into a frying pan and cook until transparent, then add the crushed garlic and fry for around 3 minutes. In a bowl add half the pumpkin, cooked onions, garlic add the ½ the double cream, fennel, sage, salt and pepper.

Then in a lasagne dish add a layer of milk to the bottom then top with a layer of lasagne, then pumpkin add a layer of pumpkin mix until it's all used. Then mix the remaining pumpkin and cream together and layer onto the top of your lasagne sheets, once you have done this sprinkle over the parmesan. Then put add a aluminum foil sheet to the top of your dish and place in the oven for approx 20 minutes, then uncover for 15 minutes or until it goes golden brown.

Pumpkin soup

This is such an old favourite and can be done in so many different ways, but here is our favourite simple recipe:
2 onions, sliced finely
1 clove of garlic
½ pumpkin
2 small potatoes, peeled and chopped
1 carrot chopped
Thyme, rosemary and parsley
Salt and pepper to season
500 ml of chicken stock

Fry the onions in a small amount of oil until transparent, then add the garlic for around 3 minutes, ensuring you don't let them burn. Then add all of your ingredients to the pan and boil for around 20 minutes. Once your vegetables are soft you can then add half of the soup to a liquidiser, once you have done this add it back to the pan stir and then serve with some homemade garlic bread.
