In our busy lives it’s hard to think about conserving things that we normally discard, especially at Halloween when there is so much to do and think about if you have a young family. But keeping the left over pumpkin seeds really can provide a healthy snack for you and your family to enjoy.
If you have already tried to bake your seeds and have found that they have just burnt on the outside it’s because you need to pre-boil them first. Here is a recipe which will help you to perfect your technique.
Pumpkin seeds – first of all clean them with cold water in a colander then transfer them to a pan of boiling water, once they have boiled for around 10 mins reduce and simmer for around 10 mins. This method makes them nicer to eat and more likely to cook evenly during roasting. Drain, then dry with a tea towel or kitchen paper, place on a roasting tin and drizzle with olive oil, massaging it into the seeds, then add some sea salt. Place in the oven at 160c, cook for around 20 minutes, stir them half way, remove some to make sure they are cooked and if they are remove and if not leave them for a few more minutes, you can tell when they are cooked as they will be easy to bit through. Once you have taken them out of the oven, add some more salt if required and eat, you can also store them in a glass container to make them last longer but make sure they are completely cooled before hand or you will reduce their life.
