Pancake Day – Make Your Own With A Twist…

Shrove Tuesday or Pancake Day will be celebrated on the 4th March this year, traditionally it’s the last day before the period of Lent when Christians have to abstain from indulging.
Pancakes are very easy to make all you need are the following ingredients, to make a basic pancake mix
2 eggs, preferably free range
300ml semi-skimmed milk
1 tbsp sunflower oil or vegetable, plus extra for frying
pinch salt
100g plain flour
Place your flour in a bowl, make a well in the centre and crack in two free range eggs, add half of the milk, and the oil and mix with a spoon, once this is completely mixed add the rest of the milk and whisk. Then add small quantities to a heated pan with some melted butter, cook and flip, and add a sauce of your choice – which could be lemon, jam, maple syrup, ice-cream – if you have your own favourite sauce then please share it with us on our FB page.
The twist:
If you would like to make small pancakes, then follow the same recipe but use self raising flour, with 1 teaspoon of baking powder, which will allow them to rise, use a tablespoon to place small rounds onto a heated buttered pan, and cook on each side for 2 minutes (don't be tempted to look), you will notice small bubbles appearing in the surface, once cooked sprinkle with icing sugar and drizzle maple syrup over the top – delicious.
If you fancy something different then you could add some of the following to the pre-cooked mix; chocolate drops, spices such as cinnamon and nutmeg, nuts, and ginger.
