If you find yourself with left over turkey then there’s so much more you can do with it than just eat it cold in sandwiches or as an accompaniment to salad.

Any cooked meat is really good if you blitz it up in the food processor and turkey is no exception. So that’s why we have chosen this recipe for Asian turkey burgers.
Asian turkey burger recipe…
You will need:
2 tsp of red Thai curry paste
1 tsp of soy sauce
2cm root ginger
400g of blitzed turkey
Blend all of the ingredients together in your food processor, until completely mixed. Then scoop the mixture into a hot frying pan, about a tbsp at a time and press down with a spatula to form a burger shape, until cooked through. This is great served with an Asian salad of cucumber and carrot strips.

This recipe was recently featured in the ‘BBC’s Eat Well For Less’ programme hosted by Gregg Wallace and Chris Bavin. It’s a really unusual way of using up left over turkey.
400 grams cold cooked turkey
1 large onion, chopped
4 tablespoons single cream
4 tablespoons dry sherry
Salt and black pepper
Mix all ingredients up in a Food processor and serve in ramekins.
