This is the latest campaign from the LoveFoodHateWaste website who states that a staggering 86 million birds are thrown out uneaten.
They state their are various ways in which we can reduce this waste, they say don’t forget you can freeze cooked and raw turkey if you find you have too much - it will keep up to a year in your freezer which means that if you portion it up and label it well you can use it in many more dishes from curries to pies to making a delicious sandwich. Remember you can freeze poultry right up to the use by date. Try and use up your fridges contents before Christmas that way you will have plenty of room for any left overs.
If you want to cook up a feast with your left over turkey on Boxing Day how about using it to make a Turkey and Chickpea Coconut Curry, or a Turkey Tomato Gratin, or Turkey and Cranberry Spring rolls - which all look delicious on their recipe page
This was our favourite turkey recipe as it combines not only left over turkey but also cranberry sauce and any left over stuffing.
500g pack shortcrust pastry
200g (7 oz) leftover roast turkey, diced
2 tbsp cranberry sauce
6 leftover stuffing balls, roughly chopped (140g)
50g low fat soft cheese
75g (3 oz) frozen peas, defrosted
1 medium egg, beaten
