Most of us are realising the impact of eating meat, and what effect it can have on the environment - whether you have gone completely vegetarian or you are just trying to cut down a few days a week, or just looking at ways to cut down on red meat we have found some lovely BBQ vegetarian recipes you can try out this weekend from the BBC Good Food website:

Herb paneer parcels:

You will need:

            •            2 x 225g blocks of paneer

            •            1/2 small red onion, finely chopped

            •            25g butter

            •            1 tsp chaat masala

For the green herb paste

            •            85g coriander leaves and stalks

            •            25g mint leaves

            •            1 garlic clove

            •            a small piece ginger, peeled

            •            1/2 - 1 small hot green chili (we used an Indian finger chili), deseeded (optional)

            •            1 tbsp lemon juice

            •            1 tbsp vegetable oil

            •            1 tsp garam masala 

            •            2 tbsp double cream

            •            3 tbsp thick Greek yogurt

            •            1Ž2 tsp ajwain seeds

Barbecued fennel with black olive dressing

You will need:

2 fennel bulbs, sliced lengthways into 1cm-thick pieces

1,1/2 tbsp olive oil

2 tbsp finely chopped black Kalamata olive

1 garlic clove, crushed

Juice of 1 lemon

Parsley and basil, finely chopped

Stuffed peppers on the barbie

2 tbsp olive oil

50g pine nuts

140g long grain rice

2 garlic cloves, chopped

350g vegetable stock

1 bunch spring onions sliced thinly

140g cherry tomatoes, halved

150g ball mozzarella, chopped

140g Gorgonzola

Handful each of parsley and basil chopped

3 red and 3 yellow peppers
