Cooling Alcohol Free Drinks This Summer…

There are plenty of non-alcoholic drink recipes this summer so why not quench your thirst with some of our cooling drinks this summer:

Minty Mojito

225g of caster sugar
Fresh mint leaves, around a large handful – source these cheaply at your local market
2 tbsp of sugar syrup
2 tbsp of lime cordial
250ml of water
Soda water
Ice – crushed

1) Heat the caster sugar and water until the sugar dissolves and then add the mint leaves.
2) Then crush the mint leaves into the bottom of your pan with a wooden spoon.
3) Then add to a jug together with the sugar syrup, lime cordial and soda water – add as much soda water as you think necessary.
4) If you can’t get hold of crushed ice, simply add some cubes to a plastic sandwich bag and crush with a rolling pin, adding to your tasty Mojito.

Watermelon and strawberry cooler…

Watermelons and strawberries are bang on season at this time of year, so it's a perfect time of year to create this cooling drink. You will need either a smoothie maker or a blender to create this drink.

1/4 of a watermelon
1 punet of locally grown strawberries
Juice from half a lime
Approximately 6 mint leaves
2 Chia seeds
Ice - crushed
Half a bottle of soda water.

1) Blend the strawberries and watermelon together, and then sieve so that you remove the pulp.
2) Add the chia seeds to the mixture and leave in the fridge for around 15 minutes so that the flavour of the seeds can penetrate into the fruit.
3) Then add the mint leaves, soda water and ice then serve.

Raspberry lemonade

Punnet of raspberries
Half a litre of Lemonade
Ice - crushed

1) Blend the raspberries, then sieve out any pulp.
2) Add the remaining raspberries to the blender with the ice.
3) Add the mixture to the lemonade and serve with more ice.
