Brazilian Snacks For The World Cup

You could really impress your friends for the next Work Cup gathering by bring along some home make Pizza Empanadas.  They are a classic Brazilian salgado (salty snack), it's a flaky crust filled with melted mozzarella cheese, deli ham, slightly sweet tomato, and earthy oregano. And in Brazil, they're considered fast food, you can pick them up at pastelarias.
3 cups flour, all-purpose
¼ teaspoon salt
6 ounces cold unsalted butter, cut into small pieces
1 large egg, chilled
For the Filling:
¾ cup shredded deli ham
¾ Cup shredded mozzarella cheese
12 cherry tomatoes, halved
1 large egg (white and yolk separated)
pinch of oregano
Step 1
Make the dough in a food processor, mix the flour and salt together. Add the butter, egg, and 5 tablespoons of water until a clumpy dough forms. Be careful not to overwork the dough. Just mix until it comes together.
Step 2
Form the dough into ball, wrap in plastic wrapper, and chill in the refrigerator for approximately 30 minutes. Then, unwrap and roll out the dough into a thin sheet over a floured surface.
Step 3
Cut out round disc shapes using a round medium-sized or small mould or cutter. Use immediately or store in the freezer for up to 3 months.
Step 4
For the filling take a small bowl, mix both the ham and cheese.
Step 5
Assemble the pizza empanadas, adding a spoonful of the ham and cheese mixture on the centre of each empanada disc. Top with 2 halves of a tomato and sprinkle a little bit of oregano.
Step 6
Brush the edges of the pizza empanada discs with the egg whites or a little bit of water (although the whites tend to be more effective at sealing the edges). Then fold the empanada discs and seal the edges gently with your fingers and a fork to crimp. Lightly brush the top of the pizza empanadas with the egg yolk thinned with 1/2 teaspoon of water.
Step 7
Put in a deep baking pan or pyrex dish. Cover with foil (don't let it touch the pizza empanadas). Let themrest in the fridge for about 30 minutes or until ready to bake.
Step 8
Pre-heat the oven to 400 degrees F (200 degrees C) and bake for 15 - 20 minutes, or until golden. Serve warm by themselves or with a dipping sauce.
