5 Cheap And Easy Summer Meals For Your Little Ones…

Here are some easy to make meals for you to create with or for your children these summer holidays:

Bean Tostadas

You will need:

• Olive oil

• Corn Tortillas

• Cooked Pinto Beans

• Shredded lettuce

• Grated Chedder

• Diced Tomatoes

• Sour Cream/or salad cream

• Salt and Pepper to season

Just top the ready cooked Tortillas with pinto beans, tomatoes, cheese, lettuce, sprinkling of oil, tomatoes and sour cream and enjoy!

Home made burgers

You will need:

 • Lean minced beef

• 1 onion

• Garlic

• Tomato ketchup

• 2 slices of bread

• 1 x egg - whisked

• Dried Cumin

• Fresh coriander

• Salt and Pepper to season

Put the onion, coriander, cumin, and bread into a blender, take out and put in bowl with the rest of the ingredients and squeeze together with your hands, and form into small burgers and cover and put in the fridge for a couple of hours, cook either on the BBQ or fry for as long as you wish.


Potato Tart

You will need:

• 6 x Potatoes

• Garlic

•1 onion finely chopped

• Parsley

• Ready to roll short crust pastry

• Chedder cheese

• 2 eggs

• 1 tub of 250ml single cream

• Salt and Pepper to season

Peel 6 medium size potatoes, slice and cook in the microwave for 5 mins, cover with water. In the meantime pre-heat your oven to 180c, grease a quiche dish with butter, and place the ready-made pastry inside. Once cooked strain off the access water and add to the bottom of the pastry. Add the garlic and onion. Mix the egg, cream together and season well, cut up the parsley and add to the quiche dish, grate a small cube of Chedder cheese onto the top of the mixture and cook on 180c for about 25-30 mins.


Pizza Bagels

You will need:

• Packet of bagels split in half

• Jar of pizza sauce

• Mozzarella cheese

• Pepperoni sliced or ham

• Salt and Pepper to season

Place the bagels on a baking tray, spoon on the pizza sauce until you get a think layer, add the ham or pepperoni and grill on a medium heat until they turn brown.


Chicken Salad Wraps

• 2 cooked Chicken Breasts diced into cubes (these can be cooked in an oven for about 25 mins on 180c, or can be bought ready cooked.)

• 1 small apple diced

• Chopped Almonds*

• Mayonnaise

• Grated carrot

• Teaspoon of paprika

• Lettuce leaves such as Iceberg

Mix the chicken cubes, mayonnaise, apple and chopped almonds together, then serve in a bowl for the kids to spoon onto their lettuce leaves, then sprinkle on the grated carrot.
