3 tasty asparagus recipes

It’s at this time of year that asparagus is in season and at so tastes at its best. The most common type of asparagus is the green variety, which tastes good in soups, omelets and lots of other dishes, then there is the white variety which is also available which has as slightly different taste as it is grown under ground. Red asparagus is very sweet, so is good when used raw in salads – but this is slightly harder to source.
One of my favourite recipes is one from Jamie Oliver’s Kerryann’s dippy eggs & asparagus soldiers – it’s the most delicious combination, and is very easy to do – a perfect lunchtime meal.

You will need:
·  1 bunch of asparagus
·  4 large free-range eggs
·  sea salt
·  freshly ground black pepper
·  optional:
·  crusty bread
