3 Delicious Summer Pudding Recipes...

Over the past couple of weeks, we've enjoyed some lovely warm weather, so here are a few summer tarts you can enjoy, whether you take them on a picnic, have them on a pudding, they use seasonal fruit and look delicious.

Summer pudding:

No list would be complete without a traditional summer pudding, so here is a recipe from the BBC Good Food Website:
Ingredients you will need:

 *   300g strawberries
 *   250g blackberries
 *   100g redcurrants
 *   500g raspberries
 *   OR 1¼kg/2lb 12oz mixed berries and currants of your choice
 *   175g golden caster sugar
 *   7 slices day-old white bread, from a square, medium-cut loaf

Back to local boy, Jamie Oliver for his take on a summer desert recipe:

Summer Fruit Jellies - these are individual puddings and at only 67 calories each they are perfect if you are keeping an eye on your waist line.

Ingredients you will need:
·  a few handfuls blueberrries
·  a few handfuls raspberries
·  4 gelatine leaves
·  2 tablespoons caster sugar
·  400 ml Prosecco or Champagne
·  fresh mint leaves, to serve

Lemon Ricotta Cheesecake with a Confit of Lemons

Although this is part of Delia's winter collection, we thought it would be a lovely spring recipe in anticipation of the next wave of nice weather. It's a bit longer to make than the other recipes that we have chosen but it does look delicious:
You will need:
3-4 lemons
12 oz (350 g) ricotta cheese
1 x 11 g sachet gelatine powder
2 large egg yolks
2½ oz (60 g) caster sugar
10 fl oz (275 ml) double cream
For the base:
4 oz (110 g) sweet oat biscuits
1 oz (25 g) flaked almonds (these can be bought ready-toasted)
2 oz (50 g) melted butter
For the confit of lemons:
2 large juicy lemons (unwaxed if possible)
4 oz (110 g) granulated sugar
